These Pecan Pie Balls are bite-sized treats that pack all the flavors of classic pecan pie into a delightful no-bake dessert. With a crunchy pecan center and a rich chocolate coating, these treats are perfect for holidays, parties, or a quick indulgence any time of year.

Ingredients
  

  • 2 cups pecans finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • ½ cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 teaspoons coconut oil optional, for a smoother chocolate coating

Instructions
 

  • Prepare the Pecan Mixture:
  • In a food processor, pulse the pecans until finely chopped. Transfer to a mixing bowl and combine with the graham cracker crumbs and powdered sugar. Stir in the light corn syrup and vanilla extract until a sticky dough forms.
  • Shape the Balls:
  • Scoop out small portions of the dough (about 1 tablespoon each) and roll into balls. Place them on a baking sheet lined with parchment paper.
  • Chill the Balls:
  • Refrigerate the balls for 30 minutes to firm up before coating them in chocolate.
  • Melt the Chocolate:
  • In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each interval until smooth.
  • Coat the Balls:
  • Using a fork or skewer, dip each ball into the melted chocolate, ensuring it's fully coated. Place the coated balls back on the parchment-lined baking sheet.
  • Set the Chocolate:
  • Allow the chocolate coating to set by refrigerating the balls for another 30 minutes.

Make Them Festive: Decorate with sprinkles, crushed pecans, or a drizzle of white chocolate before the coating hardens.
