- Prepare the Pecan Mixture:
- In a food processor, pulse the pecans until finely chopped. Transfer to a mixing bowl and combine with the graham cracker crumbs and powdered sugar. Stir in the light corn syrup and vanilla extract until a sticky dough forms.
- Shape the Balls:
- Scoop out small portions of the dough (about 1 tablespoon each) and roll into balls. Place them on a baking sheet lined with parchment paper.
- Chill the Balls:
- Refrigerate the balls for 30 minutes to firm up before coating them in chocolate.
- Melt the Chocolate:
- In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each interval until smooth.
- Coat the Balls:
- Using a fork or skewer, dip each ball into the melted chocolate, ensuring it's fully coated. Place the coated balls back on the parchment-lined baking sheet.
- Set the Chocolate:
- Allow the chocolate coating to set by refrigerating the balls for another 30 minutes.
