Ingredients
  

  • 4 large russet potatoes peeled and thinly sliced

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter.
  • Prepare the Creamy Sauce: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Pour in the heavy cream and milk, and whisk to combine. Add in the fresh thyme, salt, and pepper. Let the mixture simmer for 3-4 minutes, stirring occasionally.
  • Layer the Potatoes: Arrange half of the sliced potatoes in an even layer in the prepared baking dish. Pour half of the cream mixture over the potatoes. Sprinkle half of the cheddar, Gruyère, and Parmesan cheeses over the top.
  • Repeat the Layers: Add the remaining potato slices on top, followed by the rest of the cream mixture and the remaining cheeses.
  • Bake: Cover the dish with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  • Garnish and Serve: Once baked, let the scalloped potatoes rest for 5-10 minutes before serving. Garnish with fresh parsley or chives if desired. Serve warm and enjoy!
