Turkey Pockets

Turkey Pockets are a delightful and versatile recipe perfect for holiday gatherings or an easy meal to use up leftover deli turkey. These flaky pastry pockets are filled with turkey, creamy cheese, and savory herbs, making them a comforting and crowd-pleasing option for any occasion.

Ingredients
  

  • 1 package puff pastry 2 sheets, thawed
  • cups deli turkey diced or shredded
  • ½ cup cream cheese softened
  • ½ cup shredded cheddar or mozzarella cheese
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp dried thyme or rosemary
  • Salt and pepper to taste
  • 1 large egg beaten (for egg wash)

Instructions
 

  • Prepare the Filling:
  • In a mixing bowl, combine the deli turkey, cream cheese, shredded cheese, mayonnaise, Dijon mustard, garlic powder, thyme, salt, and pepper. Mix until well combined.
  • Prepare the Puff Pastry:
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry sheets on a lightly floured surface to smooth the creases. Cut each sheet into 4 equal squares.
  • Assemble the Pockets:
  • Place a generous scoop of the turkey filling in the center of each puff pastry square.
  • Fold each square into a triangle or rectangle, pressing the edges together to seal. Use a fork to crimp the edges for a decorative touch.
  • Arrange the pockets on the prepared baking sheet and brush the tops with the beaten egg to ensure a golden-brown finish.
  • Bake the Turkey Pockets:
  • Bake in the preheated oven for 18–22 minutes, or until the pastry is puffed and golden.
  • Allow the pockets to cool for a few minutes before serving.

Notes

Add Vegetables: Include diced cooked vegetables like spinach, onions, or bell peppers for added flavor and texture.
Make Ahead: Assemble the pockets and freeze them before baking. Bake straight from the freezer, adding a few extra minutes to the cooking time.
