Farmer’s Casserole
Farmer’s Casserole is a hearty, comforting dish that brings together wholesome ingredients like eggs, potatoes, cheese, and vegetables in a deliciously satisfying bake.

Ingredients
- 4 cups frozen hash browns thawed
- 1 cup shredded cheddar cheese
- ½ cup diced onion
- ½ cup diced bell peppers optional
- 1 cup cooked and diced chicken or turkey sausage optional
- 6 large eggs
- 1 ½ cups milk whole or 2%
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: 2 tablespoons chopped fresh parsley for garnish
Instructions
- Prepare the Baking Dish
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
- Layer the Ingredients
- Spread the hash browns evenly in the prepared baking dish.
- Sprinkle the shredded cheese, onions, bell peppers, and optional cooked sausage over the hash browns.
- Make the Egg Mixture
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Pour and Bake
- Pour the egg mixture evenly over the layered ingredients in the baking dish.
- Bake uncovered for 40-50 minutes, or until the eggs are set and the top is golden brown.
- Rest and Serve
- Allow the casserole to cool for 5 minutes before slicing. Garnish with fresh parsley if desired, and serve warm.
