Ingredients:

  • 1 cup warm water (110°F/45°C)
  • 3 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup warm milk
  • 1 large egg, beaten
  • 2 tsp vanilla extract
  • 1/4 cup unsalted butter, melted
  • Oil for frying
  • Confectioners’ sugar for dusting

Instructions:

  1. Prepare the Dough:
    • In a small bowl, dissolve yeast in warm water with a teaspoon of sugar. Let sit until frothy, about 5 to 10 minutes.
    • In a large mixing bowl, combine flour, the remaining sugar, and salt. Add the yeast mixture, warm milk, beaten egg, vanilla extract, and melted butter. Mix until the dough comes together.
    • Knead on a lightly floured surface until smooth and elastic, about 8-10 minutes. Place in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 to 2 hours.
  2. Roll and Cut the Dough:
    • Once risen, roll out the dough on a floured surface to about 1/4 inch thickness. Cut into 2-inch squares or desired shapes.
  3. Fry the Beignets:
    • Heat oil in a deep fryer or heavy pot to 350°F (175°C).
    • Fry the dough squares in batches, flipping them once, until they are puffed and golden brown, about 2 minutes per side. Use a slotted spoon to transfer the beignets to paper towels to drain.
  4. Serve:
    • Dust the warm beignets generously with confectioners’ sugar and serve immediately.

Tips:

  • Ensure the oil temperature is correct to avoid soggy or overly greasy beignets.
  • These are best enjoyed fresh but can be reheated in an oven for a few minutes to restore their crispness.
