Ingredients:

  • 1 can (14.75 oz) salmon, drained and flaked

Instructions:

  1. Prepare the Salmon Mixture:
    • In a mixing bowl, combine the drained and flaked salmon, making sure to remove any large bones and skin if desired.
    • Add the chopped onion, green bell pepper (if using), breadcrumbs or crushed saltine crackers, beaten egg, mayonnaise, lemon juice, Dijon mustard (if using), garlic powder, salt, and pepper.
    • Mix everything together until well combined. The mixture should be moist but firm enough to hold its shape.
  2. Form the Patties:
    • Divide the salmon mixture into 6 equal portions and shape each portion into a patty, about 1/2 inch thick.
  3. Heat the Oil:
    • Heat the vegetable oil in a skillet or frying pan over medium heat until it shimmers.
  4. Cook the Patties:
    • Carefully place the salmon patties in the hot oil, being careful not to overcrowd the pan. Cook in batches if necessary.
    • Fry the patties for 3-4 minutes on each side, or until golden brown and crispy on the outside.
    • Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.
  5. Serve:
    • Serve the salmon patties warm with lemon wedges on the side for squeezing over the top.
