White wine vinegar: You could also swap out the vinegar for apple cider vinegar, red wine vinegar, or even lime juice as a substitute. Although it alters the taste, it doesn’t negatively impact the dish.
Extra sweet “shoepeg” corn: You can replace the extra sweet corn with regular canned sweet corn or frozen corn. The recommended quantity for either option is ¾ cup, but you may also use the entire 15-ounce can of corn if desired.
